Sometimes something is so yummy that you don’t even know it is good for you! Like this salad! Full of whole grains and protein – it is even vegan, depending on your pesto recipe. If you use quick barley, this recipe is done in 5 minutes flat. I’m old school and like to the traditional barley, but then again, I also grow the pesto in the backyard, so it takes a bit longer…
- 8 oz Barley, cooked to package directions and rinsed under cold water
- (1) 1 oz can Chick Peas, drained and rinsed
- 1/2 cup Pesto
- 1 cup cut Green Beans
- 1 Tablespoon Olive Oil
- Salt and Freshly Cracked Black Pepper
- Mix everything together. Taste for seasoning and enjoy!
