3 ingredients plus seasoning. Ready in minutes; fun to say and fun to eat!
- 1.5 cups all purpose flour
- 2 eggs
- 1 cup milk
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- pinch of grated nutmeg
- Bring a pot of water to boil and salt generously. Drop temperature to a simmer while you assemble the spaetzle. Have a colander, rubber spatula and slotted spoon near by.
- In a large bowl, mix the flour with the salt, pepper and nutmeg. In a small bowl whisk the eggs and milk together until combined. Add the liquid to the dry and mix together. A few lumps are fine.
- Move your bowl of batter over to the stove. Bring the water back to a boil. Transfer the dough to the colander and use the spatula to push the dough through the colander into the boiling water. Give the spaetzle a stir and let them cook for 3 minutes. Pull out of the water using your slotted spoon.
- This is where you have options! Eat right away, topped with butter. OR Mix the hot dumplings with a splash of milk, grated gruyere and sauteed onions, bake until bubbly. OR Put the cooked spaetzle into ice water to shock; drain and dry on a towel, saute in butter until golden when ready to eat.
