This is my version of the Moroccan spice blend.  Ras al Hanout means top of the shop and can have anything from rose petals to saffron to ginger to black pepper.

  • 1/2 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1 tsp ground coriander
  • 1/4 tsp cayenne pepper
  • 1/2 tsp ground clove
  • 1/2 tsp ground allspice
  • 1/4 tsp ground black pepper
  • 1/2 tsp kosher salt

When ready to use, mix with:

  • 3 tbl olive oil
  • 1 tbl crushed garlic
  • 1 tbl chopped ginger
  • 1 orange – grated zest and juice

For Roasted Broccoli – toss all with 2 lbs broccoli florets and roast at 450* for 15 minutes.  Mix in 1/3 cup pistachios and 1/4 cup chopped dates.  Yum!
