Kutchins Family Recipe…That Works!  Best served with Scotch.

  • 1 cup butter, softened
  • 1/2 cup powdered sugar
  • 2 tsp vanilla extract
  • 2 cup all purpose flour
  • 1 cup ground nuts *
  • 1 pinch kosher salt

*I buy pecan meal to make these.  You can buy ground nuts in little packs at the grocery store and pecans, almonds or walnuts are good.  Or, throw the nuts into your food processor and pulse until very fine, but stop before you get nut butter.

  1. Pre-heat the oven to 350*.  I make these in a food processor, but a stand mixer, hand mixer or a bowl and a wooden spoon all work.  We are adding all of the ingredients at once and mixing until combined!
  2. Once everything is mixed, the cookies can be made right away or the dough chilled for up to 2 days.  Make small balls – about 1/2 oz each – that’s 1 tablespoon.  Place the balls on sheet trays, 1.5 inch apart – they don’t spread.
  3. Using a fork, press the cookie balls down slightly.  They should not be flat, but gently rounded.
  4. Bake until very light brown on the bottom, about 16 minutes.  Let cool on a wire rack and then consume!  They freeze well.
